Vegetable Spaghetti Squash
Discover the fascinating Vegetable Spaghetti Squash (*Cucurbita pepo*), an open-pollinated winter squash variety that yields fruits with a unique, spaghetti-like interior. The pale yellow, oval fruits can grow up to 25cm (10 inches) in length and are produced on long, productive vines.
These remarkable squash store well, providing delicious and healthy meals throughout the winter months.
A Natural and Fun Pasta Alternative
To enjoy Vegetable Spaghetti Squash, simply boil or bake the whole fruit until tender, then slice it lengthwise. The fibrous interior can then be easily forked out, creating strands that look and feel remarkably like cooked spaghetti. Serve it simply seasoned or topped with your favorite pasta sauce for a nutritious and plant-based alternative to traditional pasta.
The smooth and very hard yellow rind ensures good storage potential.
Long-Season Growing for Winter Enjoyment
Plant your Vegetable Spaghetti Squash seeds in a warm, sunny location. Direct sow or transplant in late May or early June once the soil is warm. For transplants, start seeds indoors during the first two weeks of May, ensuring they are in the ground no later than June 15th.
These vigorous vines require ample space, so provide at least 90-120cm (36-48 inches) between plants in rows 120-180cm (48-72 inches) apart. With a maturity of around 100 days from transplant, this squash will be ready for harvest in the fall.
To improve storage, wipe down mature fruits with a diluted bleach solution (1 part bleach to 10 parts water) if the skin is intact. Store in a cool (10-15ºC or 50-60ºF), low humidity environment with good air circulation for months of enjoyment.

Zucchini Mix Leila, Soleil & Ismalia, the Kiepenkerl Zucchini Mix combines three coordinated F1 hybrid varieties in cultivation and harvest timing: golden-yellow ‘Soleil’ with a fine mild flavor, dark green ‘Leila’ with a mild spicy aroma, and firm-fleshed, fruity-sweet ‘Ismalia’. This zucchini blend offers varied flavors and is resistant to powdery mildew, suitable for outdoor areas, raised beds, and containers. The bushy plants are easy to harvest and add variety to the garden. In addition to the courgettes themselves, the flowers are also edible — providing decorative and tasty flowers alongside the fruit. All three varieties share identical growing requirements and harvest timing, allowing the gardener to produce three colors and three subtly different flavors from a single coordinated sowing operation.
